I have a big catering gig for 125 coming up in a couple weeks and smoked sausage is one of the three meats they will be having. I have a commercial seasoning blend that I use quite often for making sausage but wanted to try something different. Whenever I try to make sausage from scratch I find a lot of recipes I get from the internet are pretty bland or ordinary and I have trouble tweaking them in to great. So my question to any of you forum members is this...Do you have a standout recipe for some sort of sausage (that will be smoked) that you and the people you make it for are always blown away by when they have it? If you have one to share Id love to experiment with it! I have the gear and the know how, but am lacking that great recipe. Thanks and hope to see some good ones!
