For those of you who may be interested , you can purchase a laymans video on preparing Beef, Lamb and Pork Carcases from the following website:-

This video gives a good insight in how to cut and prepare your carcases, it does not show you all the different cuts you can make as they are too many to include. Neither does it show you any sausage making or bacon curing, however it is still a good video and the style is informal and easy to follow.
