I've never tried ostrich sausage, or any form of cured ostrich meat before; does it taste and feel close to beef? Because I've only tried BBQ'd ostrich steak and it did feel close to a piece of beef that had been prepared the same way.
I liked the taste, the one time I had it. Just treat it as you would any lean game, and I'm sure it would be fine. I expect they are a challenge to raise.
