Hey hey, after seeing Brican's seafood pie recipe, i had a hankering. As it turns out the Kokenee Salmon (a fresh water salmon related to sockeye i think) happen to be "running" in the local river.....so went down with a pole and snagged around 40 of em......
here's the little buggers after a 7 min brine....waiting for the mysterious "pellicle"
off to the smoker.....(i was bored and found out my phone has special effects)
After a few hours of smoking.......
And more time to strip the white meat....
The fish has a lovely smokey aroma that I think will work well in pies. My wife & i aren't enamored by fish in general, so I'm always looking for ways to "disguise" fish in our diet....
I was then thwarted by the local grocery store being closed and I had no frozen peas & carrots.....hmmmm ......
