My neighbour has a glut of cucumbers and gave me three enormous ones today. Too many to eat so I made up some cucumber and lime marmalade which has a lovely delicate flavour. I peeled and thinly sliced the cucumbers, zested and squeezed six limes and added this to the cucumber, total weight just over a kilo. Added the equivalent weight in jam sugar and brought to the boil for 10 - 15 minutes. Job done, sausages tomorrow, Cumberlands and pork and apple.

Sounds good. What does it go with? On bread or more of a condiment?

I put it on bread/toast, but why not use it as a condiment as well. When an American friend of my late father came to stay with us back in the fifties he put orange marmalade on his bacon at breakfast and made a sandwich of it. My brother and I, both under ten years at the time watched in awe!

That sounds good! I can almost taste it.
Something to try with cucumber. Equal parts water, sugar and rice vinegar. I use 1/4 cup of each for 1 good sized cucumber. Half the cucumber length wise and remove the seeds then slice very thin. Desolve the sugar in the water and vinegar and add the cucumber and then add a small handful of chopped fresh cilantro and chill for about a half hour and serve. It's very refreshing.
