Most has been said here about training in Germany for sausage making.
The main requirement is that you speak and read German as all the schooling will be in German and so are all the recipes.
It also has been mentioned that Germany has very strict laws as to what can be put into a sausage, Switzerland has evn stricter laws.
This link may help ypu to find a school or butcher willing to train you, but it is in German.
