I have just taken delivery of Franco's salami kit and can't wait to get started.
First off I want to make a simple sausage and will try Oddleys basic pork recipe - something simple but tasty http://forum.sausagemaking.org/viewtopic.php?t=402.
Once I have the confidence making simple sausages I want to make a batch of salami, but I don't have any instructions for the kit.
Franco, do you have any info on using your kit? Or has anybody else used it and could give me some advice?
