Trying to find a stagé in Italy

Ive spent quite some time trying to get ahold of various salumerias in Italy, so i decided to book a flight and wing it. Any small salumerias I should seek out? many of the larger producers can not take me in due to the sanitation codes.

Thank you for your help. I met with Massimo Spigaroli of Antica Corte Pallavicina to request a stage. After interviewing, they accepted me and I start this Tuesday. I can't wait
