Is it normal for the casings of poached sausage to have the consistency of a condom..? Are you supposed to chew your way through them or discard it and just eat the sausage within..?

After poaching they can be fried or baked to crisp up the skin. I usually poach then freeze; it makes it faster for me to have sausage for breakfast.

With some sausages that you poach, it is expected that the casing will be removed before eating. In other cases, after poaching you fry them in butter or a little fat, or broil them to crisp the casing. For my taste, I think even the sausages where the casings are supposed to be removed after poaching are better with crispy casing.

it might depend on your supplier/producer of casings. some from which i buy do this; some don't, even if i poach them the same way.
