Heart Healthy Muffin

I make my own Heart Healthy Muffins they have nuts and omega-3, I bake them in small muffin liner (golf ball size) they have 60 calories and 3.5 grams of GOOD fat, I'll eat them as a snack or when I wake up at night and have to have something.

You can create lots of different muffin recipes with different flours, oils, fruits and other ingredients to help improve your health.

½ cup Flaxseed meal
½ cup Wheat flour
2tsp low sodium baking powder
½ tsp baking soda
2 tbs flaxseed
1/3 cup raisins or any dried fruit
½ cup walnuts

1/8 cup brown sugar
1/8 cup white sugar
2 tbs walnut oil
1 cup mashed bananas
¼ cup apple sauce – no sugar
½ tsp vanilla extract
½ tsp maple syrup extract
4 o/z egg beater

Mix the dry and wet ingredients separately and then fold together.
Put in the oven at 350 degrees for 15-20 minutes.

Calories = 147g
Fat = 8g fat from the walnuts, olive oil & flaxseeds = good fat
Cholesterol = .33
Sodium = 116mg
Carbs = 17g
Protein = 4g
Fiber = 3.5g
Omega-3 = 1793mg or 1.79g
Omega-6 = 3518mg 0r 3.52g
Ply = 6g
Mono = 1.5g

Thanks for sharing Howard, they sound great, my only problem is I'm diabetic and need to eat low carb. But I would love to eat a few of those. Dan

Great recipe I will give it a go

Ive made this a few times its delicious and can be turned into muffins


1 medium eggplant (200 g), peeled and diced
150 g dark chocolate (minimum 70 per cent cocoa solids), broken into pieces
60 g coconut oil
60 g soft pitted dates, diced
½ tsp salt
3 eggs, beaten
1 tsp baking powder
80 g almond meal (ground almonds)


Its part of a gut bacteria diet
but its really low sugars the only sweetner is a few dates and the natural sweetness of almonds so it is relatively low carb
I have it with greek yoghurt and raspberries and it is so decadently delicious for something that is so healthy
