Has anyone tried making bacon using hot chili peppers? I have a few slabs of Canadian back bacon and Maple buckboard bacon curing right now, but I wanted to try something different.... I am considering using jalapeno peppers or some nice small red chilli peppers, has anyone done this before? I don't want to kill the flavour of bacon but I do want to have that heat so that when I throw it on top of a burger it's a real surprise that no one is expecting. I have a nice 3LB pork butt waiting to go if anyone can help. I would be smoking this as well.
I'm Too cheap to buy store made sausages, but spent way too much on equipment.
