favourite 'all beef' recopes please

I want to venture into a few 'all beef' fermented and or cooked sausage recipes for a new group of customers - all ideas and recipes gratefully received.

Blimey, I was hoping that we'd still got members that could contribute to posts like this. TBH the only thing I make with beef is hot-dogs - but I mix it with pork.

I am also looking at doing some all beef sausages, but I have put this on hold a bit till the temperatures drop somewhat (we have been sitting at 40+ oC for the last weeks).
I should be able to come up with something when it cools down. I am looking at using my recipe for beef burgers and making them into sausages, but as said, haven't gotten around it yet.

Have you had a look at Len Poli's site? Lots of recipes there, including some all beef ones.

same here Phil. I don't think I ever made an all beef anything. usually pork or pork with beef.
I do have one idea in the back of my head though, might give it a go this weekend

Thanks guys. Paul - great that's what I'm after. Badjak - done most of the usuals.

Jewish historical theme seams a potentially good one and is where I have been looking so the Pastrami angle is great.

Lots of beef sausages in Australia probably more than pork ,its either lots of cheap beef or Jewish butchers.
I prefer pork or pork and veal.
