I made up another 6 Litres yesterday from our latest batch of trotters and always love bottling it up knowing it will breathe a whole new dimension into sauces, gravies and stews over the next few months, and especially this years boxing day 'mixed bag' game pie
This year this consists of a brace of hen pheasant, a brace of partridge, a good sized hare, bit of Roe deer and an unfortunate woodcock that strayed into my sights last week!
