Fruited Cole Slaw

1 lb Shredded green cabbage
1 lb Shredded red cabbage
8 oz. Walnut pieces, toasted
2 Red apples, thinly sliced
4 oz mayonnaise

Combine green and red cabbages, walnuts and apples in large bowl. Add mayonaise and toss to coat.

An explanation of the "Fred-up" copyright. I am in the process of compiling a recipe book and my eBay ID (or one of them) is Fred-up. As this is being compiled for the members of the FH&G discussion board it seemed a good idea to use my ID for the Book.

All the recipes are mine and have all been tried by me or my family which is also where I got a lot of them from.

Minted Tomato Salad

1 1/4 lbs tomatoes, sliced
1 tbsp red wine vinegar
2 tbsp olive oil
1/2 tsp dried mint, or 1 tbsp fresh, chopped
1/8 tsp salt
1 small iceberg or romaine lettuce

Arrange tomato slices on a plate. Combine remaining ingredients, except lettuce, in a jar with a tight fitting lid. Shake vigorously. Pour dressing over tomatoes and toss gently. Serve on a bed of lettuce.

I dont have a name for this side salad. I made it for a theatre companies BBQ and it seemed to go down well.

Salad

2 rashers bacon
2 eggs
1/2 head lettuce, shredded
1 carrot, grated
1 tomato, sliced
1/2 red pepper, sliced
1/2 green pepper, sliced
1 small red onion, sliced into rings (optional)
1 tbsp corn or salad oil
1 to 2 tbsp red wine vinegar
salt and pepper to taste

Place bacon in a large frying pan. Cook over medium heat until evenly brown. Drain, crumble and set aside.

Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, shell and chop.
Place lettuce in a salad bowl along with the carrot and tomato. Sprinkle with bacon and eggs and toss.

Mix oil, vinegar and salt and pepper and drizzle over the salad.

Pineapple Coleslaw

1 small green cabbage, shredded
2 carrots, peeled and grated
4 floz pineapple juice
8 oz mayonnaise
1 tbsp Sugar
Salt and white pepper to taste
2 tbsp white vinegar

Combine everything and mix well.
Optional: Add some finely chopped diced fresh or tinned pineapple.

Variations: Replace pineapple juice with apple juice or cider.

Diet Coleslaw

1 small cabbage, shredded
1 carrot, grated
1 red or green onion, cut into rings and halved
1/2 sweet red, yellow or
green pepper; diced, (optional)

Dressing:
1 clove garlic, minced or 1 tsp garlic powder
4 tbsp water
2 tbsp lemon juice
1 tbsp granulated sugar
1 tbsp olive oil or salad oil
1 tsp Dijon mustard
salt and pepper

For an attractive salad, use a combination of red, white and green cabbage, then garnish with toasted caraway seeds. Combine cabbage, carrot and onion and add sweet pepper/s (if using).
Combine garlic, water, lemon juice, sugar, oil and mustard; mix until
sugar dissolves. Add salt and pepper to taste.
Pour over salad and toss to mix.

This is a very nice dipping sauce for cocktail sausages and weiners.

Ginger Apple Dipping Sauce

3 large apples
2 tbsp fresh ginger, finely chopped
1 tbsp dark soy sauce
2 tsp sugar
1/2 to 1 tablespoon wine vinegar to taste

Peel and core the apples, and cut into thin slices. Cook the apple slices with the ginger gently in a cup of water. Puree the mixture after cooking. Reheat and add the soy sauce, the sugar, and vinegar to taste

The diet coleslaw looks an interesting one, I think I'll try that tonight.

By all means do so if you wish. I'll see if it will change for me.

The diet cole slaw is tasty. You can use diet mayo if you want but I find that stuff tastless.

Coleslaw

1 small head finely sliced cabbage
1 stalk celery
1 red pepper
1 small carrot
1 spring onion
sprigs of parsley

Dressing*
1 tbsp balsamic vinegar
juice from 1 lime
1 tsp dry mustard
1 tsp soy sauce
1 tbsp pure maple syrup
dusting of cayenne
1/2 tsp caraway seed


Cut the pepper and carrot into match thin strips.
Finely chop celery, onion and parsley.
Toss and refrigerate until used.

*Or use mayonnaise.

Coleslaw Salad

12 oz red cabbage, shredded
2 carrots, grated
1 onion, thinly chopped
1 red onion, thinly sliced
4 tbsp mayonnaise
2 tbsp cider vinegar
2 tsp sugar
1/4 tsp salt
1/2 tsp celery seeds (optional)
1/2 tsp black pepper

Combine both cabbages, carrots and onions in bowl. Mix together.
In separate bowl, blend together mayonnaise, vinegar, sugar, salt, celery seeds and
pepper. Mix until sugar is dissolved.
Pour dressing over cabbage mixture and mix well to coat.
Refrigerate for at least an hour before serving.

Another favorite, goes well over sausages and steaks.

Curry Sauce

1 onion, peeled and sliced
1 tomato, skinned and chopped finely
1 oz flour
� pint vegetable stock
salt and pepper
1 carrot, peeled and sliced
1 cooking apple, peeled, cored and chopped
1 tsp curry powder
1 tsp lemon juice
olive oil

Gently fry the sliced onion and carrot in the olive oil. Stir in the flour and curry powder.
Add the lemon juice and cook, stirring all the time for a few minutes.
Slowly add the stock and then the sliced tomato and the peeled, cored and chopped apple. Season.
Bring to the boil and simmer for 15 minutes.

Sweet Chilli Sauce

5 chillies, chopped very small
500 ml maple syrup
3 tbsp cider vinegar
4 tbsp sherry
4 tbsp light soy sauce
2 tsp ginger
3 cloves garlic, crushed
1/4 tsp pepper
1/4 tsp paprika

Mix together chillies, maple syrup, vinegar, sherry, soy sauce, ginger, garlic, pepper and paprika.
Simmer ingredients in a saucepan, stirring frequently over low heat until thickened (about 30 minutes).

1 large apple, cubed
2 tbsp sugar
1 tsp grated orange peel
1/8 tsp cinnamon
1/2 tsp salt
4 oz mayonnaise
1 tsp lemon juice

Combine all ingredients in a large bowl and toss lightly.
