Hilltop Beans
Last year I was invited to cook at the Jack Daniels BBQ Championships with a friend of mine who qualified for the invitational. The comp is held in Lynchburg Tenn at the Jack Daniels Distillery. The night before the comp they have a dinner for the teams at the top of the hill where the distillery is consisting of Southern Foods and plenty of Jack�a great time was had by all. This was one of the side dishes and is southern comfort food at its� finest. Very simple to make with few ingredients. Hope you enjoy
1 - Meaty Ham Bone (Smoked Ham Hocks or Smoked Turkey Legs can be substituted)
1 - 16oz bag of Great Northern Beans
1 - Large Onion medium dice (white or yellow)
5 - Cloves of minced garlic
Chicken Stock
Salt and Pepper to taste
Water
Rinse the beans and pick out any foreign material
Add all of the ingredients above and more water if necessary to cover the ingredients. Bring to a boil, cover and reduce heat and let simmer for 3-4 hours.
If using a crock pot cook on low all day.
I don�t soak the beans at all�when they are done cooking the bean juice is almost like a gravy.
