Soft flat bread, help needed.

If it was the pitta bread recipe from ny paul did you use bread flour? I have tried a few us recipes overtime and got caught out initially and used uk plain flour , the US all purpose flour is much higher protein than UK plain flour, after using bread flour recipes were much improved.

Yes, I used allinsons bread flour and it was the recipe from Paul, like I said the bread it made was brilliant, a local shop is selling pizza stones at a good price so I am off to get one later, so I will be having another go today.

Forgot to say in last post thanks very much for the naan bread recipe, it was brilliant and so easy to make, it was better than anything the local take aways sell, I feel like I'm making a rod for my own back though, now, nobody in the house wants naan from the take away, and nobody will eat any other bread apart from Phil's (wheels) soft bread rolls, were will it all end, lol.
