Pizza Express Bruscheta

Postby Frosty615 » Tue Dec 17, 2013 10:19 am

Hello all,
I've recently got into the world of bread making, made a lovely take on a Sausage and egg mcmuffin the other day (everything home made, including the brown sauce and butter).

Anyway, I love the bruschetta that they serve at pizza express - does any one know what sort of bread it is so I can make this lovely dish at home?

Hi

Try googling recipes for Italian country bread, it's a rustic loaf and probably traditionally used in Italy. I've not eaten in pizza express, but they probably use ciabata, most recipes call for it.

Hi Jenny,
Thanks for the response
I think I'm going to have to go to PE and take a photo of the bread they use.....It's not quite like any other sort of bread, it's not really rustic or crusty, it's really difficult to explain it. I suppose it's a bit like ciabatta but with a glazed crust?
I'm going to have to find a picture....

Could be Piadina, Italian type of flat bread.

Do you have a cross-section picture to show the texture?

If its full of big holes its a ciabatta

Probably just a fatter pizza dough as I doubt a franchise would be making a whole lot of different complex doughs.
yet to take the plunge still researching

I don't think you can make the same bread even if you have a recipe, still flour will be different, yeast. Trust me its not the same. Like tomato sauce made in Italy ( I was there on holiday) and the same tomato sauce made in UK ( I was a chef for 12 years) big difference.
