White mold on sausage

Postby Kmhammond » Sun Aug 26, 2018 8:06 pm

Hi, I am making my first fermented sausage an I have run into a possible problem with an unknown mold popping up be for the mold I inoculated it with. I inoculated my pork and venison sausages 3 days after fermenting them with mold 600 but when I went to innoculate them this mold was already present. So I washed them with vinegar and rises them with water before applying the mold 600. Now, 2 says later, the spotty white mold has returned and I'm only seeing the slightest bit of the dusty with mold associated with the mold 600. The spotty fuzzy white mold is also leaving dark spots after it is wiped off. Is this sausage going to be trash or should I keep aging it? Any help is appreciated.

Thanks
-keith

Unfortunately I wiped the mold with vinegar before making this post but here are some images of the spots it left behind as well as an image of an almost identical looking mold from online.
