Bresaola Casing

Hi everyone,

I am making a Bresaola and have it hanging in a fibrous collagen casing. There are some air pockets in the casing. I've pricked them with holes but I'm wondering if I should just take it out of the casing and hang it without a casing. I have a picture below

I would leave the casing on even if it is loose in places. Do you have some elastic netting you could put over it?

Failing that, I would string it to minimise the voids.

Thank you for the replies! I ordered netting and will place the Bresaola in it. I will follow up when its completed to let you know how it did.
