Texas hotlinks/hot guts

Hi guys.I have been watching a lot of texas bbq videos on youtube and it seems like every bbq joint has a delicious sausage.Im wondering does anybody have a good recipe for a pork/beef sausage like the ones made in elgin etc.Thanks
