Hello everyone, my name is Mario, an Italian butcher-wanna-be.
Since the beginning of my training I've wanted to learn how to make a GOOD sausage, but unfortunately in my neighborhood there are every year less butchers and the one who remain are overly attached whit the saying
"off the pig nothing will left" vein included... or there are those who are using a lot of power to extend expiry date.
So i've taught to ask Doc. Internet for a solution, said so I hope to learn a from the lot of you and one day teach someone myself.
