Hello everyone, my name is Mario, an Italian butcher-wanna-be.
Since the beginning of my training I've wanted to learn how to make a GOOD sausage, but unfortunately in my neighborhood there are every year less butchers and the one who remain are overly attached whit the saying
"off the pig nothing will left" vein included... or there are those who are using a lot of power to extend expiry date.
So i've taught to ask Doc. Internet for a solution, said so I hope to learn a from the lot of you and one day teach someone myself.

Welcome and unfortunately supermarkets and the greed driven capitalist system have had quite an impact on butchery and virtually all food.
The trend seems to be heading back in the other direction for some and this site is a testament to that.
