Hi Sam,
It's great to see you doing the environment a favour by eating all those possums. When I was in Tasmania on a fishing holiday a few months ago, I tried smoked Possum/Wallaby sausages. The taste was good, very more-ish.
Possums are now protected there and can be shot only on a special licence to manufacture specialist charcuterie, catering for the tourist trade. Amazing what the tourist dollars can do in Government House.
I like your set up, one of these days when on holiday in Aotearoa I certainly will call in with a few coldies.

Wow, interesting. I always wondered why we don't send possums back to Australia as they are endangered there now until I realised how many other animals are there in their place. Didn't know people could get permits to hunt them. It would be great to meet you in person Jan. You are welcome here any time. All of you. I have put a barrel of loquat wine down. It wil be ready around November.

I will have to bring my little pot still with me to distill it. Never done loquat wine before.

Great plan. I would love to check it out! I have always wanted to make a small scale still, but never got around to it. You have inspired me to plant some sugar cane. I made some wiked wine out of some once, but I never drank it because it seemed to have let the wrong bug in it would have distilled off into something drinkable or at least run the car, but I ended up just tipping it into the fertiliser barrel.
