Where to buy, how to use. Stuffers, casings, spices, grinders, etc.

I am looking at a used Buffalo #22 meat mincer, I know that Nisbets sell a few sized plates (3, 6 & 8 mm) but does anyone know if there are any other plate manufacturers who's plates are interchangeable & fit the Buffalo mincer?, I'm thinking of much larger hole size, 16-20mm

As far as I'm aware #22 plates a fairly interchangeable. I've bought from a variety of sources and the only problem I've ever had was one where the thickness of the metal was too thin which meant that the collar didn't tighten properly.
It may be worth looking at Weschenfelders, they're prices a generally fair, and if you have a word with Tim Weschenfelder, I'm sure that he'll help with any doubts.
