I am needing some guidance on purchasing a PH meter and a AW meter (water activity). I'll be using these meters on almost a daily basis in my small business.
Any help would be appreciated...

The meter most used for meat in commercial situations is The Hanna HI99163 Meat pH Meter.
I'm afraid that I can't help with the Aw meter as they're way outside of my budget. I suggest maybe asking on The Salt Cured Pig Facebook group as I know there are many other US based commercial producers in that group.
