Where to buy, how to use. Stuffers, casings, spices, grinders, etc.

Sauage Stuffer or Mincer Attachment

My husband and I currently make about 50kg of Italian sausages every winter for drying - we use an old Kenwood home unit which has been taking forever to say the least (mincing and stuffing casings on it).

Time has come to upgrade - would you suggest for this quantity to get a stronger machine for both mincing and stuffing (mincer combo) or would you suggest getting a better mincer and a separate sausage stuffer in either vertical or horizontal.

There are a few on ebay for each sort of scenario i.e.
Mincer Combo

Stuffer

I am just not sure which way to go - quantity will always be about 50- 60kg - and its only used once a year for this job.

I think your right in going with separate stuffer and mincer. Your choices look reasonable. The only comment I would make is have you looked locally for any supplier that can provide you with these without involving unknown suppliers. By that I mean you have no recourse for spare parts and such by using sites like eBay as you really have no clue to the original manufacturers of this equipment.
Other than that I think your on the right track, you'll be surprised at the difference in texture you will achieve by using a dedicated stuffer.
