For the life of me i can not find a supplier in australia for the
Mold - 600 Bactoferm for my salami.

If anyone knows where i can get it i would be very appreciative.

I have used Grisell's method with great success.

I bought a commercial salami that was covered with white mold and used about half of the casing off the stick of salami and followed the rest of the instructions. I won't be buying mold 600 anymore.

Gone through it all. Bactoferm is not available in Australia. Tspx is. Not sure of results. If you find a salami with mould you can grow that way. Or you can hang it really close to yours and it might take. Yet to try that So I have been told. I'm in melb.

Shamrock Food Ingredients in Melbourne sell a lot of salami cultures etc made by SACCO. They might be able to help you.

I stock a full range of starter cultures and also have the FPN-63 one in stock that has the penicillium nalgiovense mould.

I am happy to answer questions on the choice of starter cultures for salami types that have an acid finish, and those that are more "Mediterranean" or "traditional" style.

The Mould 600 culture will be available shortly in Australia. The manufacturers will be importing some to test the market and will be sold by MBLSA in Adelaide. Send them an email.

Hi Phil,
Chr-Hansen will be importing their mould 600 Bactoferm into Australia shortly. Initially it will be distributed by MBLSA ( Master Butchers Co-op Adelaide).
I will report to the Forum when I get emails advising me that stock has arrived for sale.

It's good to know that Ross Dive has Sacco cultures available as well. I learned something new!!!

was ordering some stuff yesterday and i can confirm the MBLSA does now
supply the mould 600 in australia now , i should have my lot early next week
