Whilst on holiday in Northumberland recently we went to Craster and bought some kippers there. Never had anything like them before - absolutely delicious, and so much so I'd like to have a go at producing my own. Whilst I won't get to the Craster standard I would hope, with a bit of perseverance, to equal or better what's available in Tesco. One of the requirements for kippers is a fairly long smoking period (Craster do theirs for 16 to 18 hours), so the Bradley smoke generator would seem ideal for this length of smoking time with a minimum of attention (e.g. not having to check at 5 am that the smoker is still alight). I'd be interested to hear whether anyone has made kippers with a Bradley and if so what the results were.
