Tips and tecniques on dryng drying, curing etc.

I have an interesting question. We made up a bunch of sausage with the #2 Cure so we can hang and make dry sausage. Can this sausage be eaten as fresh, or does the cure have break down over time.

I would leave them in the fridge for a week for the cure to finish then cook them as fresh. I don't have any technical basis for this, it's just what I would do.
