On the plus side I do have around 30 kgs of mixed lumpwood charcoal & starter briquettes ready for the season, done a few practice BBQ smokes, on what was clearly too windy a day, & probably "sin of sins" playing around with homemade lamb & beef burger seasoning combos without salt to avoid the "mush" aspect, simply salting later, our huddle of 3 certainly didn't have any complaints.
I'm a big fan of the minced meat chunky bite in preference to salted broken down slop sitting on a plate prior to cooking,...but need to really read up on the subject.
Mutton & lamb mince, the clear favourite. (when I hide the ribs)
Pulled pork (have a few joints to play around with) & forgot to get a
Cheeses due to go for a cold smoke today, no room in fridges / freezers so frugality is the order of the day & the "choke point" is over.
To me half the pleasure of a forum is searching archival threads, social media is a security PITA which I hold in contempt.
