Back to Basics meat grinder: die clogging problem

Hey there, I know I'm bumping a really old thread but I found this on Google and it made me realize I was aligning the knife backwards! So thanks, first of all...
I have the exact same issue njvack had, with my Bosch MUM5 grinder attachment.
Is it possible that the problem is a direct result of aligning the cutting knife backwards? Wanted to ask that here before going through the hassle of buying new meat just for the test...

If the knife was backwards, this would be the likely cause all off your problems.

Put it the correct way around and tighten the plate against it so that it pushes hard against it. Trim all visible sinew and unwanted bit from your meat and cut the meat up in to small pieces that will easily fit the feed tube. Then put the meat in the freezer until it is very cold - getting near to when it will start to freeze. Then grind it.

Hopefully, this will solve your problem.

Thanks. I already tried grinding almost-frozen meat and got the same mushy results. Now I'll try it again with the knife aligned correctly.

I had the same problem, it quickly corrected when a placed a nylon washer on the back of the worm or auger as you call it, its makes the blade contact the plate more firmly. could be a cheap fix. Rudi
