Happy New Year and New Projects

Postby NCPaul » Sun Jan 01, 2017 2:35 am

Another year has come and it is a good time to explore what new things have your interest. I plan to butcher a hog in March and start two hams. I also have a long list of sausages both fresh and dry cured I'd like to try. What new things are you thinking about? :D
Fashionably late will be stylishly hungry.

Put house up for sale, buy a small holding, get pigs, turn them into charcuterie. 2017 going to be a big year for us.

Happy new year everyone.

Wow a small holding would be nice, good luck with it.

Small steps for me, I hope to start my first cured project this coming week, Salami

Will do - we made the decision over three years ago - the first year involved selling my stake in the business, next two contracted to the new owner which comes to an end in the early summer. It's now at the scary/exciting stage - looking to go down to North Devon/Cornwall. Won't say much more on a public forum until all signed, but hopefully will be in a position to run courses and put people up one day. In fairness the pigs might not arrive until spring 2018, but rest assured there'll be pictures when they arrive.

Update - we've exchanged contracts on a place near Bude with space for pigs - Oink! - will get there next month and will have to make plans for arcs and fencing - if anyone on this forum is local to Bude then feel free to say hello

No, just put a disabled loo in, and I'll do a few shifts for nothing! Quiet Waters isn't far away from you, make sure you connect up. John's one of the best.

That's a really good point Wheels - there's a furnished holiday let with the property that we'll want to refurb over the winter and this is something that we'll look into - Philip
