Storing my Bactoferm

Should my Bactoferm 600, F-RM-52 and T-SPX be stored in the fridge or freezer???

I currently store my Mold-600 in the freezer. Sprayed on a new batch of Soppressata but I see no mold starting?

There are a number of reasons mold is not growing; what is the temp. and humidity?

60 degrees F 80% humidity

I'd try raising the humidity slightly and re-spraying with mold solution made up in distilled water.

OK. I'M GOING NUTZ ! Sorry for the drama• I re-mixed the 600. Distilled water. No sign of white. Prior to this batch I washed the interior of the fridge with vinegar . Thoroughly dried and left open to air for 6 or so hours • still no mold growth. Did the vinegar dry but remain? Thus Killing my mold?

I have to say, my Soppressata looks, great. Mold or not. And smells great too.

Mold is not necessary, though it can help and is traditional for some salamis. There is a tutorial pinned describing how to start a mold culture from a salami that has mold already.

Paul, thank you. for your advice. This is my third batch. first was excellent. Second bland but I deeply suspect I missed an ingredient : this batch looks and smells great. Doing 2 ways: one in pork middles in the drying chamber. One batch in Umai dry bags in the fridge . Both same recipe. we'll see.
