Pheasant salami / chorizo

Good afternoon, I have been searching to no avail to find a recipe for either pheasant salami or chorizo!

Can anyone point me in the right direction or share one with me please,

Try: Our Daily Brine site. It has a recipe for Dry-Cured Spanish Chorizo (Castellano). I have tried this one and it came out fairly decent. https://ourdailybrine.com/author/hildebrant/

I have nothing for pheasant but that’s a very dry bird.
