Y'all got me missing my daughter's pancakes. She makes them with a little fresh orange juice and zest, and they are really good with sausage or bacon.

Here's one to try:
Apple Cottage Cheese Pancakes
1 cup small curd cottage cheese (200 g)
1 peeled, cored, and grated apple
1 t lemon juice (1/4 of a lemon)
1 T honey
4 egg yolks
1/2 cup AP flour (80 g)
1/4 cup whole wheat flour (40 g)
1/2 t salt
1/2 t cinnamon
4 egg whites beaten stiff
Mix together apple, cottage cheese, lemon juice, honey, and egg yolks. Add dry ingredients then gently fold in egg whites. All of the lift will come the egg whites. They will color darkly when fried in a neutral oil due to the raw apple. Yields 12

I think buttermilk pancakes are the optimal presentation. Alton Brown put out a good recipe for "mix" but it's a big batch - here's one blogger's adaptation on it

Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
3 tablespoons sugar
2 large eggs
2 cups buttermilk (at room temperature)
4 tablespoons unsalted butter, melted and slightly cooled (plus some extra for the pan)
Preparation

Heat an electric griddle to 350 or place a nonstick frying pan over medium-low heat.

Pulse the first five ingredients together in a food processor. Whisk the last three ingredients together. Add the wet ingredients to the dry and mix just until the batter comes together. Don’t overmix!

Set the batter aside to rest for five minutes.

Add the extra butter to your pan, just enough to coat, and ladle the batter in to form whatever size pancakes you want. Cook until bubbles form and the bottom is golden, approximately 3 minutes. Flip and cook until the second side is golden, another 2 minutes or so. Adjust the heat as necessary as you go along. Serve immediately or keep them warm in a 200 degree oven.

An older recipe that I came across that deserves some consideration-

Heavenly Hots by Marian Cunningham

2 large eggs
1/4 t salt
1/4 t baking soda
2 T cake flour
1 c sour cream
1 1/2 T sugar

Mix and chill batter over night. Drop by tablespoons on an oiled griddle. Makes about twenty 3 inch (7 cm) pancakes. Serves two. These have a very soft center and are delicious. What silver dollar pancakes were meant to be.

They look like what we call a drop scone or girdle scone. (girdle being the original name for griddle - I guess some puritan thought it rude!)

Rosa Parks’ Featherlite Pancakes

1 c AP flour
2 T Baking powder
½ t Salt
2 T Sugar
1 Egg
1 ¼ c milk (I used buttermilk)
1/3 c Peanut butter
1 T Shortening or oil (I used peanut oil)
Blend dry then add wet ingredients and mix until just combined. Cook in well oiled pan. The large amount of baking powder will cause these to brown quickly. The peanut butter taste is there but not overwhelming. They rise nicely while cooking. If I knew what these tasted like, I might have thought to have these with jelly or jam instead of maple syrup. So is there a difference in what I grew up with in Scotland? We had crumpets!
I'm Too cheap to buy store made sausages, but spent way too much on equipment.

Crumpets are a yeasted dough - a very high % water bread dough that sometimes baking powder is added to.

Been so long since I had them I almost forgot about them. 45years in Canada and never seen them in any of the stores that I can remember.
