Has anyone tried making fenalår?

I’ll be slaughtering a couple of rare breed 3yr old wethers in the spring and thought it might be an idea to make some fenalår with the mutton. My gut feeling is to cure in exactly the same way as I would for Iberico style ham, but if anyone has any comments I’d. e glad to read them.

I think this will be a tricky project; trying to get a uniform drying from the outside to next to the bone will require high humidity at the beginning then a slow decrease. Let us know how you do since there is no experience with this product here. Good Luck. :D

It will be an interesting journey then NCP. Looks like lots of notes and photos do document the project.
