Oven Tray

Postby georgebaker » Thu Jul 10, 2008 7:52 pm

Hi
baked a flat bread in the oven (normally use the bread maker or an electric pizza oven) tonight on a non-stick tray and it stuck (big style).

Should I
* have greased the oven tray
* used some silicon baking sheet
* pre heated the oven tray
* floured the tray?

Anything else you can think of?

Flour first, if that doesn't work, grease. No guarantee though :)

George,
My preferred method for flat breads is the silicone paper, also use it when making pizza. I find that if I am making 2 flat breads one after the other, I can even use the same piece of paper.. :wink:

When baking this way...even for Pizza, it is a better idea to have the tray pre-heated, almost scalding hot, befoer putting the bread on it, this cooks the base of the bread almost instantly and stops sticking.
Tandoor ovens and pizza ovens use this approach.
